Ik so I got this working First, I'll show you my setup to clarify why I needed this
All that was needed was to load the rpi2 with the latest version of osmc. Setting the Plex Media server as source for media files was pretty self explanatory through the settings of osmc, no terminal/SSH needed.
To make Bluetooth audio work, the only thing I had to do was SSH (default user/password is osmc/osmc) into the rpi2 osmc box and enter the following command:
wget http://paste.osmc.io/raw/qiyekuvafe -O- | sudo sh
After that, reboot the pi (sudo reboot)
And voilà, I can pair with my BT receiver and we have audio! No stuttering, no lag, and I might add: osmc/kodi is waaay more responsive when starting/stopping/scrubbing movies while playing. Pretty much instantly as opposed to Plex on an RPI. Hope this will be of any use to anyone with the same problem I had.
