Alright so here's the deal. I tried using the commands above. It returned a list of results and said permission denied for each one. I then tried the "rm" command but it said that it was missing an operand. Nonetheless, I also used the previous commands to uninstall and purge plex for good measure.
Even with the errors something must've been done because my space increased by over a gig. So i went ahead and followed all the steps in method 1 to to reinstall plex. I then started using Plex without rebooting the system. It seems my web settings remained however my server settings and libraries were gone which is good. So I setup some settings and added my Movie library.
This entire procedure took maybe 6 hours after which I shutdown the pi2. During this period everything worked perfectly. No internet or connection problems whatsoever. (Note that the same thing happened the first time I setup Plex; remember I said I can't understand how it was working in the beginning).
As soon as I turned on the pi the following day, I started experiencing network problems immediately with Plex running. I also get a system error message on startup.
All I wanted was to have a device I could use to browse the web on my TV, use to download torrents overnight and host an always on server (without needing to transcode anything - only metadata). I honestly thought the pi2 could've managed these fairly simple tasks. After weeks of wasted time I've realised that I forgot that the pi2 is a piece of crap that requires huge amounts of effort to do even the simplest of tasks (like "mapping" a network drive).
So since this issue can't be solved (who knows how other people got it working since that post is specifically for the pi2????), it's time to put the pi where it belongs; in the trash.

I think I mentioned earlier those commands needed to be run as root, this is because you are searching the entire disk and only root can peek in every folder.
I can understand your frustration, tech is fun when it works. Not that it's any consolation but many thousand users have visited the Plex Pi 2 guide and gotten it working at some point. I believe you can too.
There is something strange going on with Plex in your home network, it's like a broadcast storm occurs once you install it, it could be an outdated buggy plex client (likely) or faulty hardware (switch, wireless, for example if you are using a hub and Plex is sending out many broadcast packets looking for clients it could grind your network to a halt if not using a switch).
While I would not have recommended the Pi 2 for your specific use case because of you wanted a GUI environment, it can definitely serve Plex movies over a local home network using switches (the only reliable way) to clients not requiring transcoding and be a torrent downloader. It can also do some light Plex transcoding. I have no experience using GUI environments on the Pi 2 or using Ubuntu MATE so it would be easy to blame those Using Minibian or any image designed to be headless so the Pi 2 has maximum resources for server software you will likely experience better results (if the distro you are using is the issue). The headless server images also have a lot less bloat than Ubuntu.
I agree many things on Linux are harder than they are on Windows, mapping a network drive annoyance is a Linux thing rather than a Raspberry Pi thing.
I do believe this can be solved so if you want more assistance feel free to post. If you are dedicated I would try these things:
- Use a gigabit switch (doesnt' matter for the Pi 2 but a switch is important) for all of your devices - this will test if it has something to do with your network hardware
- Use Minibian or official Raspbian minimal installs and install Plex - will test if it has something to do with your distro
- Provide a detailed network diagram of your set up so we can find points to troubleshoot
- Make sure you include Plex clients that are on your network and how they are connected

Well its weird the problem only starts after a reboot. I don't know if its related to this system error that I have now.
My network really is bog standard.

Your idea of bog standard may not be everyone's idea of bog standard, these kinds of unusual errors are down to little details in order to troubleshoot. Doing what you expect to work isn't working so gotta dig deeper to find the issue.
It could be related to the system error (which is what exactly?).
Feel free to post all of the details of other things you may choose to try, very curious to find out what the issue is.

Likely your Ubuntu Mate doesn't have a root user, you can become root like this
I'll be surprised if it solves anything to remove those files, it looks like plex is exiting for some reason but it doesn't say why. You do have the right libc6 version so it must be something else.
Do you have a backup of your sd card from pre-plex?

Unfortunately I didn't make a backup, I wasn't expecting problems.
Even with that error plex still runs. And I'm pretty sure that error wasn't present first time around so I don't think the problem is related directly to that error. The error is likely due to the mismash of commands I've used to try and remove files and such (it mentions purge somewhere I think).
I may just make a backup of what I have so far and burn a new OS and try Plex out from the get go without modyfying anything on the system whatsoever.

I thought you removed plex with apt-get remove plexmediaserver?
A fresh start sounds like a fantastic idea, to eliminate the Ubuntu mate variable I suggest not using it this time around. SSH and web UI's are all you need

Ok, so far Plex isn't causing any problems on the fresh OS, I'll have to restart and check for problems every time I change something from now on in case the problem returns.
Next I need to mount my NAS for adding content to Plex. Do you have any suggestions on this ? Previously I used this tutorial:
