This is on a Pi 2 via ad-hoc wireless connection on the Pi. when trying to get to http://ip:32400 in the browser I see "401 unauthorized", and "Plex is not reachable" when going to http://ip:32400/web?
The service is running on the Pi, and it works without issue via the same wireless connection if the ethernet connection is active to my network.
Once the ethernet is disabled, the wifi allows connection of my devices and hands out IP addresses successfully. The Plex server just doesn't appear as an option on any device until the ethernet connection is brought back.

I have had this problem with Plex before and unfortunately I don't remember how I fixed it. I am pretty sure it has to do with plex trying to use plex.tv and comparing your mac address or something which generates this unauthorized crap.
It be cookies, maybe clear them or use a fresh browser?
If possible just flash again and only use ethernet.

Thanks for the suggestion Mike, but the whole purpose of this setup is for use in the car, so getting Plex to work with the wifi is a must.
I had the same thought about cookies or cache issues, so I made sure to try in Incognito mode and two separate devices.

Hmm if you did the cache and cookie thing it must be on the Plex server itself so try purging and reinstalling.
Code:
sudo apt-get remove plexmediaserver --purge
I thought you were going to use the access point in the car so ethernet was for the Pi but the devices connected to the WiFi access point?

I'll give purging a shot.
I was trying to use the wifi adapter that came with my Pi (CanaKit) which is set up in AP mode. I've had it working before, but this time around I'm running into these issues.
I've got a separate mini-router on the way from Amazon, which I'll have to do some research into how to set the Pi up with an external router.

Well, here's another quirk - It appears to have something to do with Plex.tv.
If I try to manually go to the web portal (IP:32400/web), I get the "Plex is not reachable" message. However, if I go to Plex.tv and hit "Launch", I can reach the server without issue.
Anyone know what's going on with that? Is there a way to tell PMS on my Pi to skip trying to contact Plex.tv altogether?
P.S. - I tried purging like you suggested @Mike , but the issue remains.

I wish I knew how Plex.tv works as it causes so many issues. It is like once you connect a home plex server to plex.tv, plex.tv takes over. I know they are doing it to improve the user experience and impose limitations but it has its drawbacks.
Someone mentioned they fixed some WiFi transfer rate issues with the edimax https://www.raspberrypi.org/forums/viewt...46&t=61004 which may help?

Well, I did two things and I'm not sure which one helped...
First, I disconnected the Pi from Plex.TV
Secondly, I set my device to "Always allow" insecure connections. Once I did that, the Pi showed up as a server without issue.
Now, I'm not sure why the Pi is showing as insecure when it is on the same network as the device is...but at least it's working now.
