they are both on the internet, but the upstream available at both ends is around 1Mbps (with the receiving end downstream being around 3Mbps at best), and with the files being in excess of 6GB then you see why attempting to do any sort of internet based file transfer is totally out of the question.

There's the critical info related to your use case!
You can try the aforementioned methods, in addition, and I'm not sure this is possible but you can symlink all of the /media/usb* folder to a single point in /mnt/usbstick
That way no matter which folder it is mounted in using usbtools it should be available in /mnt/usbstick
