It may be the distro or current version of Plex then, I stick to the Minibian distro as I experience the fewest issues with it for headless server needs and not using plex.tv
Is Plex regularly failing on boot for you?
To disable Plex you can do this

sudo service plexmediaserver stop
sudo update-rc.d plexmediaserver disable
It may be worth removing the music folders in Plex to see if it has something to do with that.
I removed the music folder and it did nothing.
It fails on occasion - I have been rebooting often though.
Is there a way I can completely undo all steps I performed in Method 1 so that I can start over (including removing all traces of Plex to see if my storage increases) ?

Sure, though Linux programs are not always get at cleaning up after themselves but this is the procedure
Code:
sudo apt-get purge plexmediaserver
sudo apt-get remove plexmediaserver

Nope, still not working. Unless I can clear absolutely everything (including all Plex files since it still remembers my configuration settings from before) I doubt it'll work.

If you ran those commands plex is definitely removed, there may be some left over configuration files but I can't see how they would affect your network if the plex binary isn't running.
Still why not try for peace of mind? Do this as root, note that it will kill anything with the name plex and any text after it

Sorry what I meant is after re-installing Plex it's still broken....Everything was perfect after I had uninstalled it....Like I said as long as its not running, I have no network issues.
I also still wonder where those 2 gigs of free space went, hmm....

Ah ok, anything special about your network topology? Are you using switches instead of hubs?
Those 2 gigs definitely went to Plex metadata, other users have complained about the same thing.

Nah, nothing special, just one dsl router/modem...
I know you explained how to remove the plex server but is there a way to "undo" all the other stuff I did with repos in the begining etc. ? And do you know where all the plex files are stored ? I can try delete those also to get a fresh start.
Oh alright thats ok then, I didn't realise Plex used so much but I'm not used to having such limited space obviously.

The second set of commands I gave you search for anything containing plex and removes them, this should include the metadata (I believe it's in /var/lib/plexmediaserver somewhere)
Removing the repo shouldn't make any difference as it only stores the locations for downloading releases on dev2day but you can do so like this
