That one looks a bit more involved, I mount using this guide (though it may need updating).
Glad to hear so far so good, do back up from time to time so you can easily revert if things go wrong. Win32DiskImager's Read button lets you do this easily.

How did you get it to auto-mount upon boot ?

It says Fire up WinSCP and add these lines to /etc/fstab, you may want to add some of parameters the other guide linked to like 0777 and some of the others.
That guide is one of the first I ever made and needs a bit of tweaking to make it more friendly to users.

Alright no problem....Unfortunately now it seems Plex is being difficult and won't start up...
I tried: sudo service plexmediaserver start but it doesn't start up.

Are you still using Ubuntu mate? By now you know my opinion of using it when we're trying to troubleshoot.
If you don't get any error from service plexmediaserver start then you need to go run the start.sh script manually in /usr/lib/plexmediaserver and see what error it outputs

So it all seems to be working fine now...
Only problem (that I sort of anticipated) is that my NAS doesn't seem to "sleep" with the pi connected to the network. This could be cause of the "mounting" method Linux uses to map shares or the fact that I have torrents waiting to download to the NAS at specific times...

Yea that will happen with the NAS, you mean the NAS going into sleep mode right? Not the hard drives on the NAS sleeping?
I assumed NAS were always on anyway since they're usually low-powered devices.
It may be possible to use magic packets from the Pi 2 to wake up the NAS for downloading using Wake on LAN but it's probably overkill.

My setup is exactly the same as the first time with ONE exception: I have not setup my wireless printer on Ubuntu yet. Will be interesting to see if that breaks it.
When my NAS "sleeps" the HDD spins down (basically "stops" - I dunno whats the proper terminology). Its a WD My Cloud.

So Plex doesn't seem to be to blame after all. Please, for your own sake, back up the SD card if you choose to try the wireless printer thing.
OK, I would still expect it to spin down in that case but maybe the Pi needs to keep pinging the NAS to make sure the storage is available. Hard drive spinning down or sleeping is what I usually call it, their may be another term.
Well done for sticking through it, I expect everything is working as you had hoped now? Not throwing the Pi 2 in the trash anymore?

Well Plex played a part because the problem went away when Plex wasn't running. Maybe a combination of Plex and the printer. Although can't be sure until I've tested that.
Yea the mounting of shares is different to windows so that could be the issue also (generally when something is mounted its like its being actively used - not sure). The fact I'm storing my torrents on the NAS through Transmission could also be the culprit even if the torrent isnt downloading (I load them into Transmission to be dowloaded during the night).
Everything seems OK thus far. My wireless mouse is laggy on the 46" TV but that isn't unheard of. I'll try gaming mode or disabling any picture enhancements...
